Something we haven't talked about is whether or not
the boat will be an even/level keel type (i.e a Simon Lake
style) or non-level keel like a military submarine.

Some people like the the dive angle military sub style
and it does sound fun.  However, the level keel type
would be simpler (as in you don't need a trim tank
or trim weight) and easier to operate.
