yes that CO2 level would be a good indicator.
Get that smaller oven out of the way then you might be tempted to go
bigger & press a dome. Would love to try that myself but not in a position
to at the moment. River is certainly getting some great experience & with
his electronics & sensor background he would be pretty useful for a lot
of submarine stuff, including monitoring & controlling oven temperatures!
