I'd consider instrumenting any system where a failure should be an 
abort.  If the system is not instrumented you may not know it's failing...

Life support:
	C02 Monitor
	02 Monitor
	Compressed Gas tank pressure

Power:
	Power supply voltage
	Power supply current

Navigation:
	Compass
	GPS
	Depth Gauge (also nice not to exceed crush depth :) )

Emergency Recovery:
	vhf
	acomms
	pinger
	stobe

Hydraulics:
	Line pressure gauges
