Omer 5 has a removable memory stick that the pilot plugs in. It has his individual preferences such as variable pitch settings and parameters governing the control surfaces. It also saves all sorts of parameters during the race for analysis on a poolside laptop. This way they make adjustments between runs. I saw data for a run and the interesting thing is that at the end of the 100m they were still accelerating.
 
The two crewmembers also have panels that give them real time feedback on a number of parameters using simple led arrays.
 
The sub is all fly-by-wire, with little servos moving the control surfaces.

Yes it is exciting.  The Omer Team has dominated recent races and will be very hard to beat.  I assisted with the first races in California held in a tow tank…water was extremely cold with visibility not being great but did get a chance to help set a world’s record speed with my alma mater’s team from FAU.  There is a lot of camaraderie among teams at the races but teams are really serious as you note.  Here is the only image that I have from the races, not sure if it will make it through the web server:
