I don't know much about ceramic seals so I can't help you there, but your ambient sub does not need anything more than the existing shaft seal on its trolling motor as long as the motor housing is pressure equalized against the outside water pressure.
Then it's just like you were running the motor at the surface since there would be no pressure difference either way on the seal. So you would not need anything other than the stock shaft seal it came with.

Flooding with oil is probably the best option for deep diving... but for ambient subs I don't see the need.  Ambient subs need more than the existing shaft seal on a trolling motor, but nothing as elaborate as a ceramic seal or oil filled casing.  Oil filled has its disadvantages also, including viscous drag and contamination.
 
I don't have a good understanding of how a ceramic seal works.  Can anyone elaborate on that?
