I don't think one would have to worry about the vegetable oil going rancid since it would not be exposed to air. And the temperature would probably not reach very high with the surrounding ocean as a very large heat sink. Food grade mineral oil (FGMO) is also available but I'm not sure if a small discharge into the ocean would be an issue.
