I believe one can make a moisture scrubber quite easily himself. You can use 
any of these chemicals:

Lithium Oxide
Sodium Oxide
Calcium Oxide (commonly known as lime unslaked; lime burnt; quicklime; calx; 
lime purified, should be cheapest)
Potassium Oxide
Barium Oxide

You can enclose this chemical into a bag of porous cloth (best result should 
be achieved with a thin flat bag), and sit a fan in front of it.

Reaction will go like this (I presume you use calcium oxide):

CaO + H2O -> Ca(OH)2

It will also heat up, especially if you have a lot of water in the air.

There's also one flaw in this design: the bag with Ca(OH)2 will also work as 
a CO2 scrubber, but this time it will _release_ water in the air. To avoid 
it, just use air which has very little CO2 in it (use air flow from the CO2 
scrubber).

As far as the fogging problem is concerned, you can use this homebrew 
recipe:

1 part glycerine
10 parts alcohol (isopropyl or grain)

Put solution on the window and then wipe with soft cloth. Windows should now 
be fog-free.
