The pressure transducer I would use is sold by Digikey, and made by
Measurement Specialties.

You can use a number of products to interface to that, depending on your
level of comfort with embedded systems. One really simple solution is the
BasicX Serial-LCD. It has an 8-channel A/D converter onboard, and you could
display stuff like depth, speed, water temperature, etc.
