Hi Alex. I like the concept of using three separate gens at 12 V each.
There are some generators that have "taps" in them so various voltages can be had from it.
Diesel for sure if you can find one that is small enough.
In general I think there's more to a generating system than just some auto alternators though. One of the members with more electrical knowledge than me could expand on this but there needs to be a "load center" where the power generated is centralized for monitoring, balancing, etc.
Probably some type of electronic device like an inverter or something will be required.
I did see some nice little diesels on the web.
That's one of the reasons I'm going with an outboard motor. It's self contained, and removable as a stand alone unit. If it breaks or needs service, just put it in the shop for repair while you still have the regular battery system to run the sub. Although gasoline is a definite hazard in a confined space, an outboard mounted to the transom plate outside the pressure hull is no more risky than if it was on the back of your dinghy.
That and if the motor is in the shop for repair, a "loaner" can be mounted in it's place until yours is fixed.
There's a small marina near me that has loaner outboards available when yours needs service.
