Dan: You are clearly ahead of the pack. This is the gage system of choice for most serious submersibles ("two stage" gages and oil filled lines)....if you don't want to make a special water to oil sensor just use a small surplus stainless steel hydrualic cylinder (BIMBA is a good brand). Allow the ambient water to enter the top port through a 5 micron particulate filter and fill the cylinder and lines with an inert oil. The old Pisces boats had a simple oil filled rubber bladder outside the hull which transmitted water pressure to the gages.
